Instant Pot Mushroom Stroganoff

Ingredients:

3 tbsp   Olive Oil

½  medium Red Onion, Diced

3 cloves     Fresh Garlic, Minced

2 cups      Fresh Mushrooms, Sliced

¾ tsp    Salt

½ tsp  Pepper

1 tsp Soy Sauce (optional)

2 ¼ cups   Vegetable Broth

1-2tbsp  Mustard

1 tbsp Flour

3 scant cups  Pasta, Uncooked (penne, rotini, etc.)

½ - ¾ cups  Sour Cream

Place the instant pot on “Saute”.

Add oil, red onion, garlic, mushrooms, salt and pepper. Saute for 7-9 minutes.

Add Vegetable broth, mustard and flour. Make sure to “deglaze the pot”, by scraping any bits off of the bottom of the pot. Stir Well.

Add the uncooked pasta and Stir

Pressure cook on HIGH for 5 minutes. Leave the pot undisturbed for 5 minutes.

Quick Release, according to the manufacturer’s instruction.

Stir in sour cream and soy sauce. Set on Keep Warm for 5-10 minutes to allow the recipe to thicken.
