Quick Beet Relish

1-1/2 cups grated cooked beets

1 jalapeno pepper, minced

2 tbsp each of red wine vinegar and prepared horseradish

1 tbsp granulated sugar

1/2 tsp Dijon mustard

 

  • Combine all. (I usually go lighter on the sugar and a little heavier with mustard.)

  • Enjoy!
